Chilli Enoki Mushroom
Ingredients:
Enoki Mushroom 400g, Steam fish soy sauce 3 tsp, Chopped pepper 4 tsp, 2 Green onion, Oil 2 tsp
Steps:
1. Cut the mushroom roots off. Wash and dry. Put them on a plate.
2. Add chopped pepper on the top.
3. Steam them for 5 minutes.
4. Pour out the additional water from the plate.
5. Cut green onion into pieces. Add them in the top of the chopped pepper.
6. Add steam fish soy sauce.
7. Heat the oil and pour it on the mushroom. Watch out for splash.
Spiced Corned Egg
Ingredients:
Eggs, Anise,Cinnamon, Sichuan peppercorns, Soy sauce, Sugar
Steps:
1. Boil eggs, then peel them.
2. Put peeled eggs into water, add Anise,Cinnamon, Sichuan peppercorns, Soy sauce and Sugar. High heat to boil. Low heat for additional 10 minutes.
3. Put eggs and sauce in the refrigerator for one night.
4. Take the eggs out, done.

Salt and Pepper Shrimp
Ingredients:
Shrimps 300g; Cooking wine half spoon; 4 pieces of garlic; Two green onion; A tsp of starch; Black pepper 1/4 tsp; White pepper 1/4 tsp; Chinese prickly ash 1/4 tsp; Salt 1/8 tsp
Steps:
1. Wash shrimps and use a toothpick to pick out the black line in the back of it. Add cooking wine. Stir and wait for 10 minutes.
2. Mix black pepper, white pepper, Chinese prickly ash and salt together. Press garlic. Cut green onion into pieces.
3. Drain the shrimp. Use kitchen paper to dry them. Add starch. Stir until all shrimps are covered with starch.
4. Put a little more oil into the fry. Medium heat for 1 minutes. Add shrimp in batches. Fry 1-2 minutes per side.
5. Remove shrimps from the fry. Remember to leave some oil at the fry. Medium to high heat. Add green onion and pressed garlic for 30 seconds.
6. Add shrimps again. Add mix powder. Stir fry for 30 seconds
Tips:
Completely dry shrimps before added to fry.

Radish Pork Ribs Soup
Ingredients:
A rack of pork ribs, radish, green onion.
Steps:
1. Cut the ribs, radish and green onion into pieces.
2. Heat a pot of water until boil. Add ribs, cook for 1 minute. Remove and drain them.
3. Put cold water into a pot. Add ribs, radish. Medium heat until boil.
4. Cover with lid. Low heat for 3 hours or more.
5. Add green onion before serve.

Ma Po (Minced meat) Bean Curd
Ingredients:
A box of tofu, ground meat 50g, Pixian soybean paste, Sichuan peppercorns, chili powder, peppercorns powder, pepper powder, starch, green onion
Steps:
1. Cut green onion into small pieces.
2. Heat oil, fry the ground meat until change color. Put it aside.
2. Heat oil again, fry the Pixian soybean paste for 2 mins.
3. Add water, 10 Sichuan peppercorns, chili powder, pepper powder. Low heat for 7 mins. Add fried ground meat.
4. Cut tofu into small pieces and add it.
5. Heat for several minutes.
6. Add water into starch. Mix into a solution. Add it into the tofu. Heat until boil.
7. Add peppercorns powder and green onion and serve.

Pineapple Rice
Ingredients:
1 Pineapple, 1 bowl of cooked rice, 1 egg, 1/4 cup of chopped onion, 1/4 cup of green peas, 1/4 cup of corn kernels, 1/4 cup of diced carrots, 1 small sausages, sliced .
Steps:
1. Wash pineapple, cut it into two part. Use a knife to cut a rectangular inside the pineapple. Use a spoon to dig out the pulp. Cut the pulp into small bites. Put them into salt water for 20 mins.
2. Medium heat. Put oil in the fry, stir the beaten egg until shape. Then take it out from the fry. Put it aside.
3. Low heat. Put oil, onion, green beans, corn, carrots, small sausages into the fry. Stir together for 3 mins then add rice.
4. When the grain of rice begin to fall apart, add pineapple pulp and stirred egg. Add some salt, and soy sauce, stir fry with high heat.
5. Put the fried pineapple rice into the prepared pineapple bowl.
Sweet and Sour Spare Ribs
Ingredients:
Pork rib 500g, cooking wine 1 spoon, salt 2g, soy sauce 2 spoon, rice vinegar 3 spoon, white sugar 4 spoon, ginger slices 4, a little sesame and minced green onion.
Steps:
1. Cut and wash the ribs. Dry them in the air.
2. Pour a small amount of oil in the fry. Add ginger slices when the oil become warm. Fry until smell the ginger.
3. Add ribs. Stir-fry the ribs until them change color. The surface of the ribs should be golden and a little burnt.
4. First add a spoon of wine, followed by two spoons of soy sauce, three spoons of vinegar and last add four spoons of sugar, stir well
5. Then pour over the ribs with boiling water, simmer 30 minutes on medium heat.
6. After 30 minutes, add salt, use high heat. When the sauce become bright and thicken, turn the heat down. Before serving, add a little sesame and minced green onion.
Tips:
1. Be sure to use pure pork chops, preferably with brittle bones. This part of the meat is soft and tender.
2. Before the add ribs, you can use kitchen paper to dry them. So it will not let oil splattering everywhere.
